Chicken Arbarita

 

(4 servings)


Ingredients:

1 tablespoon olive oil

1 onion, chopped

8 chicken thighs, boned, skinned, cubed or 4 chicken breasts

2 garlic cloves finely chopped

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes, or to taste

1 30z can chopped tomatoes

1 cup chicken stock

12 oz macaroni, rigatoni, or elbow pasta

Salt and pepper to taste

Top dish with choice of basil, arugula, grated or shaved Parmesan cheese

Preparation:

1. Heat oil in a large pan and add onion. Cook until onion softeneds (5 minutes)

2. Add chicken cubes and cook until lightly brown

3. Add garlic, paprika, pepper flakes, and cook for 1 minute. Stir in tomatoes, stock, and salt, and pepper to taste. Bring to simmer and cover and cook 25 minutes

4. Meanwhile, fill a second pan with water and bring to a boil. Stir in pasta and cook 10-12 minutes and then drain

5. When pasta is done, stir into sauce and top with arugula, basil, or cheese
