Fricassee With A Twist

(4-6 servings)

Ingredients:

3 tbsn olive oil

6 scallions

1 sweet onion, cut in half and sliced thin

3 cups corn kernels (fresh off cobb, frozen-defrosted, or roasted)

2 sups halved cherry tomatoes

4 oz. spicy italian sausage (pork, turkey, or chicken) removed from casings

1/4 lb sugar snap peas, halved

1/2 c fresh basil leaves, chopped

salt + pepper to taste

 

Preparation:

1. Heat a large cast iron skillet. When skillet is hot, sear the scallions whole until charred. When charred, cut into pieces

2. In same skillet, heat olive oil and add onions. Cook over moderate heat until they softened and turn brown

3. Add sausage to onion and cook while breaking the sausage up in pieces

4. When sausage is almost cooked, add corn and tomatoes, cook together for 5 minutes

5. Stir in sugar snap peas and cook 2 minutes longer

6. Stir in scallions and basil. Toss off the heat. Add salt and pepper to taste. 

7. Transfer to a platter and serve
