Stuffed Lobster Tails

Ingredients :

2 lobster tails split along the center top

2 teaspoons melted butter

15 buttery round crackers crushed (ritz)

1/2 cup lump crab meat

1/4 cup clarified butter

1 tablespoon chopped fresh parsley

1 teaspoon Old Bay Seasoning

1 minced garlic clove

1 teaspoon fresh lemon zest

1 tablespoon fresh lemon juice

Salt and white pepper to taste

 

Directions:

Preheat oven to 425 degrees.

Pull lobster meat out gently to sit on top of shell.

Place on a baking sheet.

Brush lobsters with melted butter.

Place all the other ingredients in a bowl and mix gentle.

Spoon stuffing on top of lobster and press,gently.

Bake lobsters 10-12 minutes.  (145 degrees at thickest part with a thermometer)
